This spelling is the one recorded in Mary's birth certificate. This is an anglicised version of a surname which is an Irish Gaelic surname, and is rendered in many different spellings in mainland Britain and elsewhere at that time, none of which - especially for people who were not themselves literate - was either 'right' or 'wrong'. They were usually written according to the writer's notion of how they sounded, or by analogy with other similar names. The 'h' in the spelling here was probably the registrar's attempt to render the pronunciation as he heard it pronounced by Mary's own father.
